Was in the main list as Space Force 2. I think there is a few more, I just need to think more on it and I believe there is a few indie games that are coming with cockpit views and there is definitely more classic games that have one.
Wing Commander 4 had no cockpit, just a simple hud like Freespace 1 & 2.

It's a sliding scale, in my opinion. How much screen furniture does there have to be before you call it a cockpit? Does Frontier or First Encounters count? The latter even had a sculpted, console look.
